The natural method of bottle-ageing results in a fresh, fruity cider taste, completely without added sugar and without preservatives - fermented and bottle-aged on the island of Rügen.
The apples for the Insel Cider come from Pomerania. The fruity balance of taste comes from over 30 different varieties. These include well-known varieties such as Jonagold, Boskop, Prinz Albrecht or Golden Delicious, but also old varieties such as Lingol, cold lemon or Sawa. The particularly fruity apple flavour comes from the selection of the varieties and the method of production in the island brewery through fermentation with Prosecco yeast and bottle ageing.
We use a Prosecco yeast for the main fermentation - this ferments the fructose in the apples into alcohol and carbon dioxide, forming a Prosecco aroma and flavour profile. As with Prosecco, we bind the carbonic acid, giving our cider a slightly sparkling character.
